Shanlinxi Dong Ding 2026

This modern competition-style Dong Ding from the high mountains of Shanlinxi comes from the same producer as last year’s offering from this region. Unlike more traditional Dong Ding, it is defined by low oxidation and deep roasting, as expected in the yearly Dong Ding competition. This processing results in a clean, polished profile with pronounced sweetness and roasted depth.

An addictive sweetness carries you through the entire session, beginning with waves of caramel, chocolate brownie, and chai latte from the warm, dry leaves. Once steeped, the leaves release a distinctive cinnamon note, which also appears in the clean, smooth liquor.

There is much more going on, though. Brown sugar blends with roasted hazelnuts, and depending on your brewing style, fruitier notes of baked peach may emerge as well. All in all, this is a Dong Ding for anyone with a sweet tooth.
