Grown in the calcium-rich soils of Uji, our matcha benefits from the region’s frequent fog, mist, and rainfall, which slow the growth of the tea leaves, thereby enhancing their flavor and producing a complex, nuanced green tea.

It balances the natural bitterness of high-grade matcha with a creamy richness, making it both invigorating and soothing. Matcha

The production of matcha involves several distinct phases, each critical to developing the tea's unique flavour, color, and aroma:

  • Heating: Freshly picked tea leaves are quickly steamed to deactivate enzymes and prevent oxidation, preserving the green color and fresh flavor.
  • Drying: The leaves are carefully dried to reduce moisture content, stabilize the flavor, and ensure a long shelf life.
  • De-stemming: Once dried, the leaves are de-stemmed and de-veined to ensure only the softest parts of the leaves are used.
  • Grinding: Finally, the de-stemmed leaves are stone-ground into a fine powder to produce matcha.

Each step is meticulously controlled to achieve the desired quality and characteristics of the finished matcha.
