Yunnan Biluochun

An affordable green tea need not compromise in flavor. This one takes a strong-hold on the palate with intense smoky notes reminiscent of baba ganoush to suggest a decent amount of roasting in the wok before being rolled into the ‘snail’ shaped leaves the tea is named after. Despite its name however, commonalities with the iconic Biluochun from Jiansu stops here. This one is made with the large-leaf varietal (Da Ye Zhong) in Yunnan, like those used in Pu’er production, giving this tea a robust nature and slightly bitter aftertaste of smoked meats that could make it a delectable choice for Chazuke rice.

Preparation

IN THE TEAPOT
  • Quantity: 6g / 500ml
  • Water temperature: 80°C
  • Infusion time: 3-4 min
GONGFU CHA METHOD
  • Quantity: 2g / 150ml
  • Water temperature: 80°C
  • 3 infusions: 60, 60, 90 sec

For best results in gongfu cha, brew in a tall glass and fill with water before adding the leaves. Too high water temperature would burn the leaves, resulting in bitter taste.
