White Tea Assortment

A selection of our Fuding white teas tuned to allow comparisons between different:

  • grades (compare: Shou Mei 2011, Bai Mudan 2011, Bai Hao Yin Zhen 2021)
  • ages (compare Shou Mei 2000, 2023)
  • terroir (Bai Mudan from Fuding vs. Indian Peony, a Bai Mudan from Darjeeling)

Preparation

IN THE TEAPOT
  • Quantity: 6g / 500ml
  • Water temperature: 80–90°C
  • Infusion time: 5 min
GONGFU CHA METHOD
  • Quantity: 3g / 100ml
  • Water temperature: 80–90°C
  • 4 infusions: 45, 45, 60, 90 sec

For best results in gongfu cha, brew in the traditional gaiwan or in a Yixing teapot. Too high a water temperature would burn the leaves, resulting in a bitter taste.
