Ali Shan

 

A high mountain tea (gao shan cha), warm and mouth-filling. It features a complex taste profile, clearly floral and nonetheless deep and rich as dry ripe fruits. Its sweetness reminds of dark honey with a light woody, maybe resin, undertone.

Few leaves still attached to the soft stem are rolled together into green pearls. Steeped, the fragrant leaves release their scent to the water, turning into pale amber liquor.

Ali Shan is, together with Li Shan and Shan Lin Xi, one of the three high mountain tea areas in Taiwan.

Preparation
IN THE TEAPOT
  • Quantity: 6g / 500ml
  • Water temperature: 100°C
  • Infusion time: 5 min
GONGFU CHA METHOD
  • Quantity: 3g / 100ml
  • Water temperature: 100°C
  • Five infusions: 30, 30, 45, 45, 60 sec

For best results in gongfu cha, brew in a traditional gaiwan or in a Yixing teapot.
