Huoshan Huang Ya 2022

Deeply savory in character, a strong roasty and nutty aroma may most recall Hojicha, the roasted Japanese green tea, yet the infusion suspends this intensity in a pleasing, mild body that lasts for many steeps. Indeed, the tradition of yellow tea production had been extinct for a time in Huoshan, where farmers had switched to the less laborious production of the more popular green tea, often available under the same name. But with the umami of seaweed and a green pepper vegetality, there's no mistaking the revivified yellow tea for its green version. Enjoy the full-bodied liquor by steeping hot, or turn down the temperature for a slight creaminess to join its walnut flavor.

IN THE TEAPOT
  • Quantity: 6g / 500ml
  • Water temperature: 90°C
  • Infusion time: 4–5 min
GONGFU CHA METHOD
  • Quantity: 3g / 100ml
  • Water temperature: 90°C
  • 5 infusions: 45, 60, 75, 90, 120 sec

For best results in gongfu cha, brew in the traditional gaiwan or in a Yixing teapot. Too high water temperature would burn the leaves, resulting in bitter taste.
