Si Ji Chun
A beloved Taiwanese oolong, Si Ji Chun's limpid brew offers a mélange of warm and aromatic flavours, from poached pears to toasted biscuits, and a subtle but distinctive scent of cherry blossoms. A light hand in steeping brings out the best aromas in the pearl-shaped leaves, which have had the best in them brought out by a tempered roasting. Its name literally means 'four seasons (of) spring', also translated as 'evergreen', because of its multiple harvests every year, and the cultivar's ability for almost magical renewal seems to make its way into the cup as well, bringing the exuberance of spring even into the depths of winter.
